Couscous is actually a North African dish of small steamed balls made of crushed durum wheat or semolina flour.

 

But what if you do not have the real couscous on hand? Well, we recommend using cauliflower instead. Presenting to you, the humble Cauliflower Couscous dish, a gluten-free mock couscous made with steamed ground cauliflower.

 

Once you try cooking and taste this wonderful dish, you will be left wondering why this simple unassuming dish is always on the sideline.

 

The Ingredients

  • 1 small of cauliflower, florets only though you need to save the stems for other use
  • 2 tablesppons of butter
  • A dash of sea salt and freshly ground pepper

 

The Method

 

1. Place the florets in a food processor.

2. Pulse until the florest are broken into fine bits resembling real couscous

3. In a deep nonstick pan, melt 1 table spoon of butter

4. Add processed bits of cauliflower to pan

5. Stir the cauliflower bits aka cauliflower couscous constantly (to enable water evaporate from the cauliflowers) until tender for 5 to to 7 minutes

6. Stir in the remaining tablespoon of butter

7. Season with salt and pepper

8. Fluff with a fork before serving
